Oh, those childhood summer Popsicles, Slushies, & Treats

If you close your eyes, do you remember those homemade popsicles you had as a kid?  Filling up plastic containers with juice, placing the lids on, and putting them into the freezer.  Then came the waiting game.  Oh, as a kid didn’t it seem like eternity until your popsicle was frozen and ready to eat!  I still remember peeking into the freezer, lifting the lid to see if it was ready, only to be disappointed that juice does not freeze in 20 min.  Then…finally; you take them out, for what seemed to be days, run the container under hot water and pull out your popsicles.  Head outside with a big smile on your face and lick away.  I remember never being bothered that half the popsicle was running down my arm, or that it broke, it only meant I had a valid excuse to be licking my arm or placing the whole popsicle into my mouth.  (Are you smiling yet)

Now as an adult, I find myself searching for Healthier Popsicles to make and share with my children (of coarse as an adult I also want to enjoy one, or two….).  Yes, I’ll admit, there are times that I do enjoy ‘slurping’ my special treat–we are after all just bigger versions of ourselves as kids.

After doing some research, I found these delicious Frozen Treats from Diane Keuilian’s website that I would like to share with you.

Strawberry Kiwi

Here’s what you need for 6 servings:

  • 2 cups strawberries, hulled
  • 2 Tablespoons filtered water
  • 2 teaspoons agave nectar (optional)
  • 2 kiwis, sliced
  1. In a high speed blender, combine the strawberries, water and agave nectar. Allow to run for a full minute on high.
  2. Place one slice of kiwi in each popsicle mold, pressed against the side.
  3. Fill the molds with the strawberry mixture
  4. Freeze until set & enjoy.

 Mint Watermelon

Here’s what you need for 6 servings:

  • 2 cups watermelon pieces
  • 3 kiwis, peeled and seeded
  • 1 Tablespoon agave nectar
  • 30 mint leaves
  • 1 Tablespoon filtered water
  1. Blend the watermelon in a high speed blender on high for 30 seconds. Fill the bottom 2/3′s of each popsicle mold with the watermelon. Freeze for 30 minutes.
  2. Combine the kiwi, agave nectar, mint leaves and water in the high speed blender for a full minute or until the tiny pieces of mint have disappeared and the green color is vibrant and uniform.
  3. Fill the remaining space in each popsicle mold with the mint mixture. Freeze until solid.

 

Blue Raspberry

Here’s what you need for 6 servings:

  • 2 cups blueberries
  • 1/4 cup filtered water
  • 1 teaspoon agave nectar
  • 1 cup raspberries
  1. Place the blueberries, water and agave nectar in your high speed blender and blend on high for a full minute or until the little pieces of blueberry skin have disappeared and the purple color is vibrant and uniform.
  2. Place 2 whole raspberries in each popsicle mold, then fill with the blueberry mixture. Freeze until solid.
Banana Coconut

Here’s what you need for 6 servings:

  • 2 bananas
  • 1 cup coconut milk, full fat from can
  • 1/2 cup unsweetened, shredded coconut
  • 1 teaspoon agave nectar
  • 1 teaspoon ground cinnamon
  1. Place the peeled bananas, coconut milk, shredded coconut, agave nectar and cinnamon in your high speed blender. Blend on high for a full minute or until smooth.
  2. Fill each popsicle mold. Freeze until solid
Strawberry, Kiwi Slushie

Here’s what you need:

  • 6 kiwi fruits, peeled, cubed and frozen
  • 2 cups fresh or frozen strawberries
  • juice from one orange
  • 8 oz sparkling water, lime flavored
  • 1 or 2 packets Stevia
  1. Peel and cube the kiwis and freeze for a few hours.
  2. Throw all of the ingredients into a high speed blender or food processor. Blend on high speed until smooth and slushy.
  3. Serve with fun straws and garnish with fresh, sliced strawberries and kiwi. Enjoy!

So go ahead.  Make with your kids and enjoy.  Don’t worry, I won’t tell anyone that the whole real idea for making these yummy treats was to take you back to your childhood memories.

And if you do not have any kids, make these popsicles for yourself anyways and share with friends.  I bet they’ll be happy with this dessert at your next bbq.
